Chef at the Market

Chef at the Market is a fun, free community event/live cooking demonstration at the Redding Farmers' Market. The event promotes the fresh, seasonal fruits and vegetables offered at the market.

When: Every Saturday, June 1 - September 28, 9:30 - 11 am

2012 Chef Cook-Off

The 2012 Chef at the Market season finale was held Saturday, September 29 at the Redding Farmers’ Market. Three talented local chefs competed - Christine Silver, Tapas Downtown, James Leedy, The Braided Mane at the Holiday Inn, and Cal DeMercurio, Old School Restaurant.

Chefs were allowed to bring basic pantry ingredients such as salt and pepper. One brought butter; another brought some salt-free rubs. The chefs decided to pool these resources and a "community" table with a variety of basic ingredients was set up for all three to use.

At the start of the event, the chefs were given a box containing the “secret ingredients” – 1 Japanese winter melon, 3 leeks, and a large sugar beet with the greens. They then had 15 minutes to shop the farmers’ market for 5 additional ingredients of their choosing. In addition to the "secret ingredients," chefs purchased the following:

Christine - Asian pear, apple, honey, red onion
James - pork sausage with whiskey, olive oil, licorice mint, pear tomato
Cal - chicken sausage, pineapple tomato, baby carrot, naan bread, Asian pear

The event was emceed by Guenn Johnsen-Gentry, local foodie and another very talented chef. Judging the competition were Doni Chamberlain, anewscafe.com, Jennifer Scarborough, KRCR Channel 7, and Mike Quinn, KLXR 1230 AM Radio. The chefs creations were judged on three criteria: 1) appearance and presentation; 2) use of secret ingredients; and 3) taste

And the winner is...
1st place: James Leedy, The Braided Main - a Napoleon (layered stack) of caramelized fillets of sugar beet and coffee rubbed Irish whiskey sausage topped with Japanese Winter melon and leek salsa

2nd place: Christine Silver, Tapas Downtown - a cool Japanese Winter melon gazpacho with a warm sugar beet green salad

3rd place: Cal DeMercurio, Old School Restaurant - chicken sausage, heirloom pineapple tomato and sugar beet ragu with braised sugar beet greens, leeks, and baby carrots sided by warm naan bread with Asian pear and Japanese winter melon compote

With heartfelt gratitude Shasta Growers’ Association and Healthy Shasta thank chefs Christine, James and Cal; judges Doni, Jennifer, and Mike; emcee Guenn, and all the wonderful folks in the audience who came to support their favorite chef and this event.
